Now that the Aphrodite Cakes are all iced, I cannot believe how good they are. I didn't want to follow the cream-cheese frosting in the original recipe (because I wanted a hard icing that could stand up to holiday rigours) so I made half with a pink rosewater & pomegranate icing and half with a snow-white almond & coconut milk icing. They are TO DIE and I heartily recommend the recipe to anybody interested in a very versatile, easy cookie that you could put all variety of flavoured icings on. I'm thinking that next time I should try a chai icing with cardamom, cinnamon, and a little black pepper and anise; and maybe a very subtle lemon & rosemary or lemon & lavender. mmmmmmm.

Next up: jam thumbprints and perhaps lemon bars! If I wrap them in paper printed with various GLBT public service announcements, will that make them Liberty Diner lemon bars?!?
